Cheddar Cheese Dip

I found this recipe from The Curvy Carrot.

Ingredients:

8oz cream cheese (softened)
2 cups Cabot sharp white cheddar cheese (grated)
1/2 cup sharp yellow cheddar cheese (grated)
1 tsp Dijon mustard
2 TBsp half-and-half
1/4 cup Guinness
2 or 3 scallions (chopped)
1 tsp garlic (minced)
2 TBsp parsley (chopped)
salt and pepper to taste

How to make it:

In a bowl of your food processor, combine the cream cheese, cheddar, mustard, and half-and-half.
Pulse until smooth.
With the food processor running, slowly pour Guinness down the feeder and blend until combined.
Add the scallions, garlic, parsley, salt, and pepper (to fast), blend until throughly mixed.
Transfer to a bowl, cover, and chill at least an hour prior to serving.
Enjoy!
