Friday Foodie Favorites: Kraft Jet Puffed Mallow Bits

     I know it's been awhile, heck...it's been a LONG time since I posted one of my yummy food discoveries.  So here it is.  I recently discovered this tiny tasty treats, Kraft Jet Puffed Mallow Bits!  They are really good by them selves or on top of ice cream or in some hot cocoa, or even better in these yummy Rocky Road Cookies I baked up!

Recipe from The First Year Blog

What you need:

1 1/4 cups all purpose flour (sifted)

1/2 tsp baking soda

1/8 tsp salt

6 TBsp  cocoa powder (sifted)

1/2 cup unsalted butter (room temperature)

1/3 cup granulated sugar

1/3 cup light brown sugar (packed)

1 egg (room temperature)

1 tsp vanilla extract

1/3 cup mini chocolate chips

1/2 cup Jet Puffed Mallow Bits

1/3 cup toasted almonds (I used pecans instead)

How to make them:

Preheat oven to 350˚F.

Line a baking sheet with parchment paper.

In a medium bowl, sift together the flour, baking soda, salt, and cocoa powder, set aside.

In a bowl of an electric mixer, cream the butter, sugar, and brown sugar together until smooth, about 2 minutes.

Add the egg and vanilla, mix until blended.

Slowly add flour mixture to sugar mixture, mix unit flour disappears.

Stir in the chocolate chips, mallow bits, and nuts.

Scoop cookie dough onto prepared cookie sheets about 1 inch apart.

Bake cookies for 8 minutes or until cookies are set around the edges, but still soft in the center.

DO NOT over bake!

Remove from oven and let sit on baking sheet for 1-2 minutes.

Move to cooling rack and cool completely and ENJOY!

Friday Food Favorites: Brianna's Champagne Caper Vinaigrette Dressing

     The other day the hubby brought this home....I tried it on my salad and I was in LOVE!  It has a sweet mustardy type of taste, so GOOD!  It has become my favorite dressing!  Great to marinate chicken or steak in too!

Through together a salad with some capers, boiled egg, 

Parmesan cheese then drizzled on some of the vinaigrette.

AWE-SOME-NESS!

You should definitely try it out!

Friday Foodie Favorites: Pepperidge Farm Gingerbread Swirl Bread

     I know it's still November, but I couldn't resist picking this up, Pepperidge Farm Gingerbread Swirl Bread.  I've never seen this before so thought I would give it a try!  If you like gingerbread, you will love this!  It's not too gingery, just enough.  I toasted a couple of slices and smeared on some butter, it was delightful!

The other day, I made it to some wonderful French Toast!

I dusted it with a little powdered sugar then drizzled 

on some homemade vanilla icing.

SOOOOO GOOD!

If you have some in your grocery store, I would try it out!

I bet it would be perfect as a Gingerbread bread pudding for Christmas!

Friday Foodie Favorites: Microwave Farmer's Popcorn Cob

     With it being the autumn season I thought I would get a little festive with some old fashion popcorn!  I found this at one of our stores, kind of like Trader Joe's.  

Just put the cob in the bag...

put bag in the microwave for 2 minutes on HIGH...

Sprinkle on some salt, or some Cheddar Cheese popcorn seasoning like Liam,

then ENJOY!

Friday Foodie Favorites: Roland Wild Swedish Lingonberries

     The other day I found this jar of Lingonberries.  I have never tasted a Lingonberry let alone even heard of them.  So, I thought I why not give it a go.  When I got home I wanted to know what a Lingonberry actually was, so, of course I googled it.  According to About.com "Lingonberries are to Scandinavians what blackberries are to Americans."  Did you know they are also a distant cousin to the cranberry?  If they are like cranberries then I know I would love them!  Now, how to use them?  I saw a few pins on Pinterest that paired Lingonberry jam with Swedish Meatballs...hmmmm interesting.  Well, I didn't have any meatballs..  So, should I spread it on some toast?  Make a PB & Lingonberry jam sandwich?  Looking through the fridge I noticed I and some roasted turkey deli meat, a wheel of Rosenborg Brie, and some bread in the pantry.  Why not make a panini?!

Friday Foodie Favorites: Hershey's Spreads Chocolate with Almond

     So, I know I missed posting my Friday Foodie Favorite last week, so here I am making it up with these delicious Hershey Chocolate Almond Brownies.  I just basically made my favorite home made Milk Chocolate Brownies then swirled the Hershey's Spread on the top before baking! They turned out amazing!

WOW! Where did October go??

     I don't know about you, but did October seem like it just flew by?  I have been soooo busy with all these fall festivities I have barely had time to blog! Craziness right! So, here's all the fun stuff we did for October all in one post!! We had a Weekend of FUN with some wonderful visitors,  Will & Erica (the kiddo's Godparents)

We dressed the kiddos up in their Halloween costumes 

and took them to the Mesilla Park Fall Festival.

afternoon snack time! It was really good!

I made some S'mores Candy Corn Biscotti

I made some regular (white, orange, and yellow) candy corn biscotti too!

This year instead of carving our pumpkin, we made it into Darth Vader.

We painted the pumpkin black and used some pumpkin push-ins.

I was going to be R2D2, so I painted my nails blue, white, glittery polishes and 

put on the Holographic Nail Wraps from Jamberry.

This year we headed over to a friend's house for some 

spooky snacks and then Trick-or-Treating!

I made these Brain Cupcakes to take over!
