Nine Down, One to Go...

Today I started off kind of sluggish since the kiddos woke up through the night, so that means I didn't get my seven hours of sleep that's part of the challenge.  But hey, it happens.  The kiddos come first.  Besides that, I did ate good meals, drank my water, and got my workout completed after I got home from book club, even though I kinda didn't want to cause I was so tired.  Funny story, were are suppose to post pictures and updates on our day on our group Facebook page and while I was typing I totally fell asleep with my phone in hand mid type.  Guess I was really tired.  That's why I'm posting Day Nine today.....

Breakfast was tasty... Greek Yogurt with Raspberry & Granola and Water

Snack on the go, Banana, some Raw Almonds, and Water

I wasn't all too hungry for lunch, so just half a Smoked Turkey Sandwich
with Heirloom Tomatoes and Spinach on 12 Whole Grain Bread and Water.

For snack I was kinda wanting something sweet,
so grabbed one of these Quaker Real Medleys bars.

That night I went to my book club meeting and stuck to my good healthy food choices.
Kale & Sausage Soup, Salad, and Water.

By time I got home it was after 9:30pm-ish, so I really didn't want to workout.
But thought I am almost done, I need to stick with it.
So....I worked out and felt much better.

One more day!

For Lunch we had leftover Veggie Pasta with Turkey Marinara,
Peaches (in water, not corn syrup), and Water

I LOVE tomatoes...these Heirloom & Cherry Tomatoes are the perfect snack with my Water!

Tried out a new recipe for dinner for some Asian Turkey Burgers on Lettuce

Garlic Roasted Cauliflower

A while ago my friend made these cauliflower florets for us.  They were so tasty, I just HAD to have the recipe.  So I called up my friend for the recipe and have been making it none stop.  Bonus is that even Kinley likes them too!  It's a clean and healthy recipe, perfect for my 10 Day Fitness Challenge!

What you need:

1 head of cauliflower
Garlic infused olive oil
salt and pepper

How to make it:

Preheat the oven to 400˚F.
Line a baking pan with parchment paper.
Cut up the cauliflower into slices or bite size pieces then place in a bowl.
Drizzle some garlic olive oil all over the cauliflower.
Then season with salt and pepper, toss to evenly coat.
Spread cauliflower on the prepared baking pan.
Bake for 20-25 minutes until starts to brown and crisp up. (I like mine a little crispier, makes them sweeter)
Flip florets to toast on the other sides about half way through.
Take out of oven and let cool a bit, then ENJOY!

Kale Salad with Roasted Sweet Potatoes, Quinoa, & Cranberries

Since I have been doing this 10 Day Fitness Challenge these last few days, I have been looking at trying some new clean healthy meals to try.  My mom has been raving on and on about having kale salads, and they are the "IT" thing these days.  So, I looked on Pinterest and it seems to be true.  I found so many different recipes.  I decided to give this one and try and it was delish!  Can't wait to share it with you!

Recipe from Eat Yourself Skinny

What you need:

Salad
2 medium sweet potatoes (peeled and cubed)
1 TBsp olive oil
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp oregano
1/2 tsp chipotle chili powder
1/2 cup uncooked quinoa
3 cups kale or mixed greens
1/4 cup dried cranberries

Dressing
1 TBsp red wine vinegar
1 Tbsp apple cider vinegar
2 TBsp olive oil
1 tsp shallots (minced)
1 1/2 TBsp honey

How to make it:

Preheat oven to 425˚F.
Line a baking sheet with parchment paper.
Rinse and peel the sweet potatoes, chopping them into 1/4 inch cubes.
Toss with olive oil, garlic powder, onion powder, oregano, and chipotle chili pepper until completely coated.
Spread sweet potatoes on prepared baking sheet in a single layer and roast in the oven for about 30 minutes, flipping them once.

While sweet potatoes are roasting, using a mesh strainer, thoroughly rinse the quinoa.
Add a 1/2 cup of water to a small saucepan and add rinsed quinoa.
Bring quinoa to a boil, cover, and reduce heat and simmer for about 13 minutes.
Remove from heat, keeping quinoa covered, and allow to sit for 5 minutes, then fluff with a fork.

In a plastic container or mason jar with a lid, add all the ingredients for the dressing.
Put on the lid and shake to combine the ingredients.
To assemble the salad, combine the kale, quinoa, and cranberries in a large bowl, toss with dressing.
Fold in the roasted sweet potatoes, then ENJOY!

Six Down, Four To Go...

Well, today marks day number six of my ten day challenge.  Today was filled with quick errands to Walmart, cleaning the house, meeting and hiring a new babysitter for the kiddos, baking, then joining my friends for our monthly Crafternoon.  A pretty busy day, but managed to eat cleanly, drink my water, and even do a workout later that night.

I had a simple breakfast, Egg Whites scrambled
with some Smoked Turkey, Grapefruit, and Water

These berries were so good for snack

Lunch time! Turkey Sandwich with 12 Whole Grain bread,
Grilled Squash, and Brown Rice & Quinoa Salad, and Water.

These Energy Bites are the perfect cure for my sweet tooth!

I made this new Kale Salad with Roasted Sweet Potatoes,
Dried Cranberries, & Quinoa, and Water for dinner.

Today, I was pretty beat, so I did an ab workout and called it a day.

Time for bed!  Goodnight all!

Five Down, Five To Go....

Well, I've made it to day five, half way through and doing great.  Today was a busy day, after I dropped Liam off at school, Kinley and I ran some errands, did a little Christmas shopping, then went to story time, and stopped by Chick-Fil-A for lunch before heading home.  Well, onto the challenge...

For breakfast I really liked my Pumpkin Spice Oatmeal, banana, and water

A light snack, some Plain Greek Yogurt with Granola and Water

For lunch, Kinley and I stopped by Chick-Fil-A.
I made the healthier choice of the Market Fresh Grilled Chicken Salad
with Zesty Apple Vinaigrette and some Water to drink.

After picking Liam up for school we had a little snack of
Apples, Cheese Stick, and some Raw Almonds.

For dinner I grilled up some steaks, squash, and asparagus to
go along with a Brown Rice & Quinoa Salad with some Water.

As for my workout...I completed the Fast Friday Workout
that was posted on our group page.
It was quick and simple, my kind of workout!

See ya tomorrow Day Six!
