Jamberry 'Lacquered Up' Nail Polish Launch Party

     With my love of Jamberry Nail Wraps, I was totally excited when I heard they were launching a Nail Lacquer line.  My friend Jayme hosted a Jamberry 'Lacquered Up' Nail Polish Launch Party.  We got to see the new colors and try them out.  Mani's & Pedi's for EVERYONE! Whoo-hoo!

Panna Cotta Tart topped with Marinated Grapes

     The other day I was invited to a fabulous Jamberry Nail Polish debut party (more of that on another post) that one of my friend's, who is a consultant, was hosting.  So I thought I would bring something fabulous that I have never made before.  So, I searched Pinterest, my favorite place for new recipes, and came across a recipe for this Panna Cotta Tart topped with Marinated Grapes.  The picture was SO beautiful, I knew this was what I wanted to make! So here it is, and it turned out AWESOME!
Recipe from Sprinkle Bakes.

Ingredients:

Marinated Grapes:
1 1/2 cups small seedless grapes
1/4 cup concord grape jelly (melted)
1/4 cup Framboise, Chambord, or other berry flavored liqueur

Crust:
1/2 cup pecan halves (toasted - can be done in the skillet over medium heat until nuts are fragrant)
1 cup all purpose flour (sifted)
1/4 packed light brown sugar
8 TBsp unsalted butter (kept cold)
1/2 tsp ground cinnamon
pinch of salt

Panna Cotta:
2 cups heavy cream
1/4 cup sugar
1 tsp vanilla extract
1 packet (.25oz) unflavored powdered gelatin
3 TBsp cold water

How to make it:

Marinated Grapes
Wash and dry grapes.
Combine melted grape jelly and liqueur in a medium bowl.
Pour in grapes and toss to coat.
Store covered, in refrigerator until ready for use.

Crust
Preheat oven to 350˚F.
Combine the pecan halves and brown sugar in the bowl of a food processor.
Pulse in short bursts to gently combine.
Add flour, cinnamon, and salt, then pulse until mixture forms large clumps.
Remove dough and press into the bottom and up the sides of an oblong tart pan with a removable bottom (approx 14x5).
Chill for 30 minutes.
Bake for 20-25 minutes, then remove from oven and let cool completely.
When cool, place baked tart crust in the freezer for 30 minutes or until frozen.
DO NOT skip this step! - Liquid panna cotta will seep through the tart dough if the crust is not frozen.

Panna Cotta
In a small bowl or condiment cup, sprinkle gelatin over the cold water.
Let stand for 5 minutes or until liquid has been mostly absorbed. 
In a heat proof 4 cup measure, heat heavy cream and sugar in the microwave until very hot - about 2-3 minutes in a standard microwave (or heat on stove in a saucepan).
Remove from microwave and pour in vanilla, stir.
Using a small rubber spatula or spoon, scrape gelatin mixture into the hot cream mixture.
Stir until gelatin is completely melted.

To assemble
Remove pan with crust from freezer and place on a baking sheet.
Place the baking sheet with pan in the refrigerator.
Using the 4 cup measure, pour the liquid panna cotta into the tart crust, filling it to the top.
(It is much easier to do this with the pan in the refrigerator, that way the liquid won't slosh out of the pan when you move it)
Let the panna cotta set, uncovered in the refrigerator for 2-3 hours.
Before unmolding, use a hot-water rinsed dish cloth that has been wrung dry to press against the sides of the tart pan.
This will allow for easy unmolding in case any of the panna cotta has seeped through the sides of the crust.
Top with marinated grapes and ENJOY!!

Friday Foodie Favorites: Simply Apple & Smirnoff Kissed Caramel Vodka


     I know I usually cook or bake something fabulous for Friday Foodie Favorite Day, but this week I wanted to share this yummy A-MAZ-ING cocktail PERFECT for the Autumn season!  With only two ingredients: Smirnoff Kissed Caramel Vodka & Simply Apple Juice!



Ingredients:

Smirnoff Kissed Caramel Vodka
Simply Apple Juice
Ice
Apple for garnish

How to make it:

Add some ice to a cocktail shaker.
Pour in 1 part Smirnoff Kissed Caramel Vodka (I used 3-4 jigger fills)
Pour in 2 parts Simply Apple Juice (I used 1 cup)
Top shaker with lid, shake until cocktail is cold.
Pour cocktail in a glass (optional: add a few ice cubes to the glass), garnish with an apple slice, then ENJOY!

Our Trip to Roswell

     The other day we packed up the hubby's Hyundai Genesis and headed up to Roswell, NM to trade it in for a Toyota Tacoma TDR Double Cab 4x4 Truck!!!  The drive wasn't bad, even with Kinley teething and fussing in the back.  The only thing that kept her calm was listening to the Breaking Dawn Soundtrack, song #15 Love Death Birth by Carter Burwell.  We listened to it the 2 1/2 hours up to Roswell and the 2 1/2 hours back home!  Good thing it was a beautiful piece of music versus listening to say "The Wheels on the Bus."

We stopped by a nearby park to enjoy a picnic,
to stretch our legs, and let the kiddos play a bit
before spending most of the day at the dealership.


Liam loved the slide and Kinley enjoyed the tunnel!






After some fun, we headed to the Toyota dealership to 
check out the new truck!


While the hubby started the paperwork, the kiddos
and I stayed outside to enjoy a little sweet treat
and watch Rio on my iPad.


The dealership actually had a little room full of toys
for the kiddos to play with.
That definitely helped the time pass along with all the snacks I brought!


So....here's the new ride!


Once the paperwork was complete we packed up the new
truck, a little tight, but definitely manageable!


So long Roswell.....


Heading home we watched another one of 
New Mexico's beautiful sunsets!

We got home a little late, thank goodness the kiddos went right to sleep.
And so did we!

Friday Foodie Favorite: Pepperidge Farm Caramel Apple Pie Cookies

     Don't you just LOVE the fall autumn season? I do....there's a light crisp in the air, time for scarfs and tall boots, watching the leaves turn beautiful colors, pumpkins everywhere, and the of course all the amazing fall flavors.  For instance, these awesome Pepperidge Farm Caramel Apple Pie Cookies!  These are so tasty right out of the package or you can try them baked into some yummy blondies like I did!





Ingredients:

1 cup all purpose flour (sifted)
1 tsp baking powder
1/4 tsp salt
1/2 cup (1 stick) unsalted butter
1 cup brown sugar (firmly packed)
1 large egg (room temperature)
1 tsp pure vanilla extract
1 tsp cinnamon
4 Caramel Apple Pepperidge Farm Cookies

How to make them:

Preheat oven to 350˚F.
Line an 8 inch square baking pan with heavy foil, set aside.
In a small bowl, sift flour, baking powder, and the salt.
Melt the butter in a saucepan over low heat and turn off the burner.
With a wooden spoon, stir in brown sugar until it is dissolved.
Quickly whisk in the egg, vanilla, and cinnamon.
Fold in flour mixture until just incorporated.
Pour half the batter into the prepared baking pan.
Place 4 cookies evenly spaced on top of the batter.
Pour the rest of the batter on top of the cookies.
Make sure all the cookies are covered.
Bake for about 20 minutes or until toothpick inserted in the middle comes out clean.
Let cool in the pan for 10 minutes.
Remove foil from pan, cut into bars and ENJOY!

October Crafternoon

     The time has come once again.....It's our monthly Crafternoon!! Whoo-hoo!  This time my friend Jennie hosted our fun festivities!  With it being Halloween season we did a few different Halloween crafts!  They were really easy, a little messy, and we repurposed a few materials.
Here's our collection of supplies....
empty wine bottles, tin cans, glass jars,
painter's tape, spray paint, hot glue & glue gun,
glow-in-the-dark paint, googly eyes, ripped material,
black felt, scissors, and markers.

I decided to decorate some of the glass jars.
I used some painter's tape and cut out shapes for eyes and a mouth.
Then spray painted the jars....
Orange for the Jack-o-Lantern,
White for the Vampire,
Green for the Frankenstein,
and Frost for the Ghost.


While we let our spray painted creatures dry, we enjoyed some yummy snacks!
Jennie made this yummy cocktail that I 
renamed Hair of the Werewolf  (Gingered Pear & Brandy Cocktail).
We also enjoyed some Curried Chicken,
Kettle Corn, 
and I brought an assortment of Candy Corn treats
including the Candy Corn Fudge &  Candy Corn Meringue I made.


Jeannie also had a Halloween Cookie station,
which the kids loved!

Caramel Apple Cookies

     Alrighty, with it going into fall I noticed many new cookie mix flavors showing up in the stores these days.  I came across Pillsbury Caramel Apple Cookie Mix at Walmart that I thought I would try out.  I did however dye the cookie batter green and made my own Caramel Frosting.  As for the cookie batter, I just followed the directions on the back of the box, then dyed the batter green before baking them.  I did post the caramel frosting, it's perfect for cookies or even cupcakes!


Ingredients:

1 cup brown sugar
1/2 cup unsalted butter
1/4 cup milk
1 tsp vanilla
1 1/2 cups powdered sugar (sifted)

How to make it:

Combine brown sugar, butter, and milk in a medium saucepan over medium heat, bring to a boil.
Cook and stir for 2 minutes.
Remove from heat and stir in vanilla.
Cook to lukewarm, then gradually beat in the powdered sugar until frosting reaching spreading consistency.
The more powdered sugar you add, the faster it will harden.
One your cookies have cooled completely, frost them with the frosting, garnish with sprinkles or roasted walnuts, then ENJOY!

Candy Corn Meringues

     I love me some candy corn! I made some of these Candy Corn Meringues to take over to my friend Jennie's house for our monthly Crafernoon.  Since we are making some Halloween crafts I wanted to bring something fun and festive!  I'm also bringing over some of the wonderful Candy Corn Fudge I made the other day.




Ingredients:

4 egg whites (room temperature for best volume)
1/4 tsp salt
1/4 tsp cream of tartar
1 1/3 cup sugar

How to make them:

Preheat oven to 225˚F.
Line large baking sheets with foil.
Make sure your mixing bowl and whisk attachment to mixer are clean and grease-free.
In a bowl of you mixer, beat egg whites on high until foamy.
Add salt and cream of tartar and whisk until soft peaks form.
Add sugar slowly over an 8 minute time period.
Once 8 minutes are over, your meringue should hold stiff peaks.
Set aside 1/4 of the meringue.
Split what is left into two clean bowls and color one with orange and one will yellow food coloring.
Fold coloring into meringue gently (DO NOT STIR) and stop folding as soon as it's barely mixed.
Put each color in a separate piping bags.
Pipe yellow rosette swirls with your meringue on the prepared baking sheet.
Top with a smaller orange swirl, then top with a white meringue star or swirl.
Bake for 1 1/2 hours at 225˚F.
Turn oven off, open oven door about  an inch and let cool for another hour.
Once cooled, remove from oven and ENJOY!

Somewhere Over the Rainbow

     Well, if you saw my last few posts you probably have figured out the theme for Kinley's 1st birthday!  Rainbows, rainbows, rainbows everywhere!  I wanted to pick out a theme without any characters but also would be gender neutral, since most of my guests have sons.  Kinley has such a colorful and bubbly personality the rainbows seemed like the perfect idea!
    
     As far as decorations go I strung small pom pom balls in rainbow order (ROYGBP and Pink) onto some thread then hung them up.  For the Happy Birthday Kinley sign, I used colorful foam boards and black foam letters, punch some holes in the corners then strung them up with some rainbow ribbon.  The Monthly Pictures, every month I made sure to take a picture of her and the number of months she was.  It was a way I could watch her grow, but I eventually want to put it in a Shutterfly photobook for her.  I went to Walmart and printed the pictures, adhered them to some scrapbook paper, cut them out with some fun edged scissors.  To hang them up, I painted some small clothespins and used a different rainbow ribbon to pin them up on.  I also wanted to show some her 1 Year Pictures I took.  I printed these at Walmart too, then went to the Dollar Tree for some simple black frames to put them in.  I decorated the buffet table and the gift table.



     I brought the rainbow theme into the food as well.  I wanted to make sure there was some good healthy munchies to counter the sweet treats.  I skewered some yummy fruit to enjoy, Red - strawberries, Orange - Mandarin oranges, Yellow - pineapple, Green - kiwi, Blue - blueberries, and Purple - grapes.  I also made a yummy marshmallow and cream cheese fruit dip.  For the veggies we enjoyed, Red - cherry tomatoes, Orange - carrots, Yellow - baby corn on the cobs, Green - edamame Blue - blue corn tortilla chips (blue was a toughie, can you think of a blue vegetable?), Purple - purple cauliflower.  I made some ranch to dip the veggies in.  I wanted something a little more solid for the kiddos and adults could enjoy.  So I found a great and easy recipe to make Rainbow Bread which I made into Peanut Butter & Jelly sandwiches.  To incorporate the rainbow theme even more, I made he sandwiches with different color flavors of jellies, Red - strawberry, Orange - apricot, Yellow - pineapple, Green - green apple, Blue - blueberry, and Purple - grape.  They turned out great! 



  Bring on the desserts!  Of course we had to have Rainbow CupcakesRainbow Brownie Pops, and Rainbow Sprinkled Popcorn.




     We also rented one of those bounce houses for the kiddos to play in.  Liam and his friends had so much fun bouncing the day away.  We let the bigger kids play in it while Kinley took her nap before the party started.  Worked out great!

After everyone left, we went and put on some comfy clothes and went bouncing!
She had a lot of fun having the whole thing to herself!

All the planning was well worth it to enjoy her special day with family and friends!
