Classy Chicken Salad Sandwiches

     We needed something of a main dish, so I found this recipe for some really good chicken salad.  Perfect on a crossaint!


What you need:

2 boneless skinless chicken breasts
1 cup mayonaise
2 stalks celery (finely chopped)
1/4 - 1/3 cup red onion (finely chopped)
1 cup red grapes (quartered)
1-2 Tbsp fresh lemon juice
salt and pepper to taste
garlic powder
1/4 cup pecans or almonds (chopped) optional
Croissants

How to make it:

Preheat oven to 350˚F.
Lightly sprinkle chicken breasts with salt, pepper, and garlic powder.
Bake until no long pink in the center, DO NOT over bake.  (will cause chicken to dry out and become hard)
Cut into halves.
Finely chop celery and red onion, set aside.
Slice and quarter grapes, set aside.
Place cooked halved chicken breasts in a bowl of a standing mixer with a paddle attachment.
Place on Speed 1 or low speed to shred the chicken.
Add the celery, red onion, grapes, lemon juice, may, salt and pepper to taste.
Stir on low speed until combined.
Add nut if desired.
Cover and chill in the refrigerator for at least 1 hour.
Then spread on fresh croissants and ENJOY!
