Grinch Cookies


Original recipe from Delicious Meliscious

What you need:

1 18.25oz box French Vanilla cake mix
6 TBsp unsalted butter
2 eggs (room temperature)
1 cup powdered sugar
1 tsp corn starch
green food coloring

How to make them:

Preheat the oven to 375˚F.
Line cookies sheets with parchment paper.
Melt the butter and set aside to cool.
In a shallow dish, mix the powdered sugar and cornstarch with a fork.
In a bowl of an electric mixer, mix together the cooled butter, cake mix, and eggs till well combined.
Add the green food coloring and make sure it is all mixed in.
Take two spoons and drop a blob of dough in the powdered sugar mixture.
Move it around with a spoon until it is mostly covered.
Then, roll dough into a ball and place on the prepared cookie sheet.
(Don't over crowd the baking sheet, these spread out)
Bake for 9 minutes (they won't look done, but they are)
Take them out of oven to cool for 1 minute on cookie sheet, then move to a cooling rack.
