Manchego Cheese & Marcona Almond stuffed Dates wrapped in Bacon

     For this month's Crafternoon I wanted to make something little different...I love making these Bacon Wrapped Stuffed Dates! I knew the ladies would love them too!  So simple with only 4 ingredients, and they are sooooooo addicting, you can't have just one!

Here what you need:

Manchego Cheese
Marcona Almonds
Whole Pitted Dates
Bacon

How to make them:

Preheat oven to 375˚F.
Line a large baking pan with foil.
Place a wire rack on top of the baking pan, spray it with non-stick cooking spray.
Cut a slit in the dates, just enough to stuff it, be careful not to slice the whole date.
Cut the bacon into thirds, so that you can wrap 3 dates with 1 piece of bacon.
Next, cut the Manchego cheese into small cubes, that can easily fit in to the dates.
To assemble, place one almond and one cube of cheese inside the date.
Smush the sides of the date to seal in the almond and cheese.
Then, wrap one of the pieces of bacon around the date and place seam side down on to the prepared wire rack on the baking pan.  
Bake for 20-30 minutes or until bacon is golden and crispy.
Take out of the oven and let cool, taste best when eaten warm.
