Monthly Menu: Marinaded Grilled Salmon, Gluten and Wheat Free Orzo Salad, & Mini Caesar Wedge Salad

      Since we were expecting some friends over for the holiday weekend, one of which has a few dietary restrictions, I wanted to make something that not only she could eat but all of us would enjoy.  It also happened to be my birthday and our friend's wedding anniversary, but because they got in a little late, we planned on having my birthday dinner on the second and a special dinner for them tonight.
September 1st: Grilled Marinaded Salmon, Gluten and Wheat Free Orzo Salad, & Mini Caesar Wedge Salads
Salmon recipe from The Real Deal Marin.
I made the Gluten & Wheat Free Orzo Salad alternating
 the Faro for the Orzo to accommodate my friend's allergy.

Grilled Marinaded Salmon

Ingredients:

1/3 cup soy sauce
4 TBsp orange juice
2 TBsp olive oil
1/2 tsp mustard
1 small green onion (thinly sliced)
1 garlic clove (diced)
1/2 tsp ginger (minced)
2 TBsp tomato sauce (alternative: ketchup)
1 tsp lemon juice


How to make it:

Measure soy sauce in a measuring cup.
Add in the remaining ingredients.
Stir with a whisk.
Pour over salmon and marinade for 30 minutes.
Grill till salmon flakes.
Peel off skin and ENJOY!
